The "Mozzarella di Bufala Campana" is produced exclusively with fresh whole buffalo milk. Mozzarella usually has a rounded shape, but it can come in other forms. In fact, depending on the type of processing, we can have morsels, braids and cardinals. The color is porcelain white, has a very thin crust of about 1 mm, while the paste is made up of thin, slightly elastic leaves in the first 8-10 hours after processing, subsequently it tends to be more melting. When cut, the mozzarella has a light white draining, with the scent of lactic ferments. The flavor is delicate and very characteristic. The product can only be smoked with natural processes through wood chips or straw.
